In Laura Alvatorre Kvalheim’s Kitchen, Comfort is an Art Form

January 31, 2017

As a Texas transplant, Laura Alvatorre Kvalheim (also known as “Booty” of Booty Loco’s) just wanted to connect with people. Little did she know that a dare to pursue one of her crafts — an age-old tinga recipe — would give her a chance to not just connect, but also bring joy to Austinites from a variety of backgrounds. After opening recently in Mueller, Laura hopes to expand this art to a whole new side of town.

Growing up in Fresno, California, Laura picked up cooking traditional Mexican comfort food directly from the hands of her grandmother, Lupe. Even as a young child, Lupe recruited her granddaughter to help her cook by buttering the tortillas for the night’s meal, sneaking one or two for themselves along the way. Lupe imparted her top-secret tinga recipe to her granddaughter, a delicious legacy Laura carried into her adult life. Tinga is Mexican dish made with shredded meat in a sauce made of red and green tomatoes, chipotle chili and onion strips.

After a journey through corporate America and meeting her future husband, Laura dared (literally) to open up her own business. “It was my husband who dared me to do it,” said Laura. “He begged me to give him the recipe, because he loved it so much, and when he later saw how much it meant to me to share the results with others, he told me I should go for it.” A few months later, Laura was in business with a food trailer that is now parked at Mueller Trailer Eats.

While she considers cooking her calling, Laura spends her spare time connecting through art. She uses photography, typography, stained glass and painting as her artistic media to start a conversation. An avid outdoors enthusiast, Laura also strives to connect with nature, making time for hiking with her family, dog and mini pig named Gerty. You can connect with Laura Wednesday through Sunday at lunch (11 a.m. to 2 p.m.) and dinner (5 p.m. to 8 p.m.), as well as on Facebook.
